Delicious puff pastries filled with a sweet apple mixture and a creamy cream cheese filling, topped with a simple glaze. Perfect for a snack or breakfast.
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Set aside.
For the Apple Filling:
2. Add peeled, cored, and chopped apples, water, cornstarch, brown sugar, cinnamon, and lemon juice to a medium saucepan. Cook over low heat, stirring constantly, until it comes to a boil.
3. Continue stirring for 3-4 minutes until the sauce thickens up.
For the Cream Cheese Mixture:
4. In a medium mixing bowl, beat room temperature cream cheese until fluffy, about 2 minutes.
5. Add granulated sugar, vanilla extract, and lemon juice and beat for an additional 2 minutes.
Assembly and Baking:
6. On a greased pan lined with parchment, roll out the puff pastry dough. Cut each dough in half and then cut each strip into 3 pieces (6 total pastries).
7. Add a tablespoon of cream cheese mixture and a tablespoon of apple filling to the center of each pastry.
8. Score the edges (about ½ inch from the edge) making a square, but do not go all the way through.
9. Optional: Brush the edges with egg wash or melted butter.
10. Bake in the preheated oven for 10-14 minutes or until golden brown. Remove from oven and once cool, drizzle with glaze over the top.
For the Glaze Drizzle:
11. In a small bowl, mix the powdered sugar, milk (or heavy cream), and vanilla extract together until combined. Once the pastries have cooled, drizzle with glaze and enjoy.
